Ingredients
- 1 tablespoon vegetable oil
- 3 drops sesame oil, or to taste
- 1/2 cup diced red bell pepper
- 1/4 cup diced onion
- 1 finely chopped green onion (white and light green parts)
- 1/2 teaspoon garlic powder
- 1/2 pound cooked and crumbled ground beef
- 1/3 cup diced fresh tomato
- 2 tablespoons fish sauce
- 2 teaspoons soy sauce
- 2 cups cooked jasmine rice
- salt and ground black pepper to taste
- 2 wedges lime
- 1 egg, beaten
Instructions
1
Heat the vegetable oil and sesame oil in a large cooking vessel, such as a wok or skillet. Introduce the sliced bell pepper, chopped onion, and thinly sliced green onion into the mixture; cook for 2 minutes. Incorporate the ground beef, sprinkle a pinch of garlic powder over the mixture, and cook for 1 minute longer.
2
Combine the diced tomato, fish sauce, and soy sauce in the mixture; sauté for 2 minutes. Add the cooked rice to the mixture, stirring until well combined, and cook until heated through, taking approximately 7 to 10 minutes.
3
Season the dish with salt and pepper, finishing it off by squeezing a wedge of lime over the top.
4
In a separate, small pan, pour beaten egg and let it cook for 30 seconds. Utilize a spatula to gently lift the edges of the omelet, allowing any uncooked egg to flow underneath and come into contact with the hot pan. Repeat this process until the top is set, approximately 4 minutes.
5
Split the cooked rice into two portions and serve half of the omelet over each serving.
