- 3 cloves garlic, minced
- 8 ounces ground sirloin
- 1/2 teaspoon salt
- 1/4 teaspoon dried red pepper flakes
- 2 ounces tomato paste
- 1/4 cup vodka
- 3/4 cup heavy whipping cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons freshly grated Parmesan cheese
- fresh basil leaves, chiffonade

Boil a large quantity of water in a pot until it reaches a rolling boil.

Add the dumplings, known as gnocchi, to the boiling water and cook until they float to the surface. This should take around 5-6 minutes.

Set aside, reserving 1/2 cup of the cooking water that will be used later.

In a separate, larger pan, heat a generous amount of olive oil over medium-low heat; add the finely chopped shallot and minced garlic.

Gently cook the mixture over low-medium heat until the shallot has softened and the garlic is fragrant, taking around 3-5 minutes.

Increase the heat to medium and add the ground meat, salt, and a pinch of red pepper flakes. Add in a spoonful of tomato paste.

Allow the tomato paste to darken and caramelize, stirring occasionally. Then, pour in a small amount of vodka and deglaze the pan by bringing the sauce to a boil while scraping the browned bits with a wooden spoon.

Let the mixture simmer for 5 minutes, allowing the flavors to meld together.

Pour in a generous amount of cream and stir until the paste has completely incorporated into the sauce.

Allow the sauce to gently simmer, stirring occasionally, until it begins to thicken, taking around 5-10 minutes.

Sprinkle a generous amount of Parmesan cheese, including an additional 2 tablespoons on top, and stir until it has melted.

Add the cooked gnocchi to the pan along with the reserved 1/2 cup of cooking water.
