- 1/4 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/8 cup olive oil
- 1 cup sliced red bell peppers
- 1 small zucchini, sliced
- 1 red onion, sliced
- 1 small yellow squash, sliced
- 2 (4-x6-inch) focaccia bread pieces, split horizontally
- 1/2 cup crumbled feta cheese

Combine mayonnaise, minced garlic, and lemon juice in a bowl, placing it refrigerated until needed.

Heat the grill to its highest temperature setting.

Anoint vegetables with olive oil on both sides, as well as the grill grate. Position bell peppers and zucchini in the center of the grill, while placing onion and squash pieces around them. Cook for approximately 3 minutes on each side, flipping halfway through the cooking time. The bell peppers may require a bit longer to cook through. Remove from heat, and set aside.

Apply a small amount of the mayonnaise mixture to the cut sides of the bread, sprinkling feta cheese on top of each slice. Place the bread slices on the grill side up, covering with a lid for 2 to 3 minutes. This will warm the bread and melt the cheese slightly, so monitor carefully to avoid burning the bottoms. Remove from heat, layering with the vegetables.
