Grilled Vegetable Moussaka
Ingredients
  • 3 large eggplant, sliced into 1/4 inch rounds
  • 3 large potatoes, thinly sliced
  • 3 large zucchini, cut lengthwise into 1/4 inch slices
  • 1/2 cup extra-virgin olive oil
  • 5 tablespoons butter
  • 7 tablespoons all-purpose flour
  • 5 cups milk
  • 1 pinch ground nutmeg
  • salt to taste
  • 1 egg yolk, beaten
  • 1 tablespoon olive oil
  • 1 1/2 pounds ground beef
  • 1 onion, chopped
  • 1 teaspoon oregano
  • salt and pepper to taste
  • 1/2 cup chopped fresh parsley
  • 5 ripe tomatoes, chopped
  • 1 cup crumbled feta cheese

Preheat your outdoor grill to a medium-high temperature and lightly coat the grates with oil.

Coat the eggplant, potatoes, and zucchini slices lightly with extra-virgin olive oil. Grill them until they are tender and have a golden-brown color. Set the vegetables aside.

Place the potatoes at the bottom of a 9x13 inch glass baking dish. Add layers of eggplant and zucchini on top, setting them aside for now.

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).

Melt butter in a large saucepan over medium heat. Gradually add the flour, and cook until it has a nutty aroma, about 5 minutes. Whisk in milk, nutmeg, and salt. Bring the mixture to a gentle simmer over medium-high heat, then reduce the heat to medium-low and let it simmer for 10 minutes. Place an egg yolk in a bowl, and whisk in 1/4 cup of the thickened milk, tablespoon by tablespoon. Combine the egg yolk mixture with the thickened milk until smooth, then set it aside.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and onion, and cook until the beef is no longer pink and crumbly. Remove any excess grease, then stir in oregano, parsley, tomatoes, salt, and pepper. Turn the heat to medium-low, cover the skillet, and let it simmer for 10 minutes, stirring occasionally.

Assemble the dish by spreading the meat mixture over the vegetables, sprinkling with feta cheese, and pouring the white sauce over the top. Smooth the surface with a spatula.

Bake the moussaka in your preheated oven until it is bubbly and golden brown, taking about 30 minutes to complete.
