Ingredients
- 1/3 cup extra-virgin olive oil
- 1 tablespoon lemon juice
- 1 tablespoon minced fresh parsley
- 1 clove garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 2 (6 ounce) tilapia fillets
- 1 large ripe mango, peeled, pitted and diced
- 1/2 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons minced red onion
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons lime juice
- 1 tablespoon lemon juice
- salt and pepper to taste
Instructions
1
Prepare the fish by combining olive oil, lemon juice, parsley, garlic, basil, black pepper, and salt in a bowl. Mix well to create a marinade, then place the tilapia fillets inside a resealable plastic bag. Pour the marinade over the fish, ensuring they are fully coated. Remove any excess air from the bag and seal it tightly. Refrigerate for 1 hour to allow the flavors to penetrate.
2
Concurrently, prepare the salsa by combining mango, bell pepper, jalapeño pepper, red onion, and cilantro in a bowl. Squeeze the juice of lime and lemon over the ingredients to bring out their flavors. Season with salt and pepper according to your preference, then refrigerate until ready to serve.
3
Heat an outdoor grill over medium-high heat and lightly brush the grate with oil. Remove the tilapia fillets from their marinade, allowing any excess to drip off. Discard the remaining marinade and grill the fish for 3-4 minutes per side, or until it is no longer translucent in the center and flakes easily with a fork. This will depend on the thickness of the fillets.
4
Serve the grilled tilapia topped with a delicious mango salsa.
