Grilled Thai-Style Barbecue Chicken
Ingredients
  • 1 bunch fresh cilantro with roots
  • 3 cloves garlic, peeled
  • 3 small red hot chile peppers, seeded and chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon curry powder
  • 1 tablespoon white sugar
  • 1 pinch salt
  • 3 tablespoons fish sauce
  • 1 (3 pound) chicken, cut into pieces
  • 1/4 cup coconut milk

Remove the cilantro roots from their stems and chop them finely, making sure to get rid of any tough or fibrous parts. Set a handful of the leaves aside for decoration purposes, as they will add a pop of color to your finished dish.

Next, combine the chopped cilantro roots and leaves, minced garlic, diced chile peppers, turmeric powder, curry powder, sugar, and salt in a blender or food processor. Blend the mixture until it reaches a coarse consistency.

Add fish sauce to the blender and continue blending until you have a smooth, creamy paste. This will be the base of your marinade.

Prepare a shallow dish by placing chicken pieces inside it. Spread the cilantro paste evenly over the chicken, making sure to coat it thoroughly. Cover the dish with plastic wrap and refrigerate for at least 3 hours or overnight, allowing the flavors to meld together.

Before grilling, preheat your grill to high heat.

To prevent sticking, lightly oil the grill grate with a cooking spray or brush. Carefully place the marinated chicken on the prepared grill, and pour coconut milk over it liberally. Grill the chicken for 8 to 15 minutes on each side, depending on its size and thickness.

Flip the chicken only once during this time, as you want it to cook evenly on both sides. During the cooking process, occasionally brush the chicken with coconut cream to keep it moist and add flavor.
