- 1/2 teaspoon chili oil
- 1 pound skinless, boneless chicken breast halves - cut into strips
- 1 tablespoon chopped fresh cilantro
- 1 tablespoon chopped unsalted peanuts
- 12 wooden skewers, soaked in water for 15 minutes
- 1 cup prepared Thai peanut sauce

Combine coconut milk, ground coriander, curry powder, fish sauce, and chili oil in a medium-sized bowl. Mix well to create a uniform blend. Add chicken breast strips and thoroughly coat them with the marinade mixture. Cover the bowl, refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.

Heat a large outdoor grill to extremely high temperatures. Insert chicken strips onto metal skewers; discard the leftover marinade.

Grill the chicken until it reaches a safe internal temperature, about 2 to 3 minutes per side, depending on the thickness of your strips.
