Ingredients
- 3 tablespoons butter
- 3/4 cup fresh bread crumbs
- 1/4 cup chopped green onions
- 1/4 cup celery, diced
- 1 clove garlic, minced
- 4 ounces cooked shrimp
- 4 ounces cooked crabmeat
- 1 tablespoon chopped fresh parsley
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 6 (4 ounce) fillets red snapper

Preheat your grill to extremely high heat by heating up the coals in a covered grill.

To prepare the stuffing, melt 2 tablespoons of butter or margarine in a small pan over medium-high heat. Add the bread crumbs and stir constantly until they turn golden brown. Transfer the toasted bread crumbs to a separate mixing bowl.

Melt an additional 1 tablespoon of butter or margarine in the same pan and sauté the onions, celery, and garlic until they're soft and fragrant. Combine the cooked vegetables with the bread crumbs in the mixing bowl, then stir in the shrimp, crab, parsley, salt, and pepper. Mix everything together gently.

Cut a large piece of aluminum foil into an 18x12-inch rectangle, making sure it's double-layered. Place the fish fillets on top of the foil, followed by a generous helping of the prepared stuffing.

Fold up the edges of the foil to create a tray-like shape, making sure everything is secure and in place. Arrange the preheated coals on either side of the grill, leaving a medium heat zone above the center. Place the fish in foil on the grill rack and cover it with a lid.

Grill the fish for 20 to 25 minutes, or until it flakes easily and is cooked through.
