Grilled Steamed Pickerel

  • 8 (4 ounce) fillets walleye
  • 2 sheets aluminum foil
  • 1/4 cup clarified butter
  • 1/4 cup lemon juice
  • salt and black pepper to taste
  • 1 large onion, sliced into rings

Firstly, prepare your outdoor grill for a medium-high heat setting and lightly brush the metal grates with oil to prevent sticking.

Next, position two walleye fillets in the center of a large sheet of heavy-duty aluminum foil. Drizzle with 2 tablespoons of melted butter and 2 tablespoons of freshly squeezed lemon juice, then sprinkle a pinch of salt and pepper over the top. Place half of an onion ring layer on top of the fish, followed by a fold of the foil's edges over the fish to create a secure seal. Repeat this process several times, then roll up the ends of the foil to form an airtight package. Repeat this process with the remaining ingredients to create another identical package.

Once you have prepared both packages, place them side by side on the preheated grill and cook for 15 to 20 minutes, or until the fish is no longer opaque in the center and flakes easily with a fork.
