Ingredients
- 4 pounds St. Louis-style pork ribs, cut into 6-inch sections
- 2 cups barbecue sauce, or to taste

Preheat a section of your gas grill to 300 degrees F (150 degrees C).

Create a makeshift humidifier by filling a small metal container with water and covering it with aluminum foil. Make multiple shallow cuts in the foil using a knife for better steam release.

Place the water-filled container on the preheated side of the grill.

Position the ribs bone-side up on the unheated side of the grill, ensuring they are not touching any other food items. Close the grill lid to trap heat and steam.

Cook the ribs for 1 1/2 hours, or until they have shrunk back from their bones. Flip the ribs and continue cooking for an additional 1 1/2 hours.

Brush the ribs with barbecue sauce. Move them to the preheated side of the grill, where they will be exposed to direct heat. Close the lid and cook for 2 minutes.

Flip the ribs over and baste them with additional barbecue sauce. Close the lid again and cook for another 2 minutes.

Flip the ribs once more, this time to their other side. Baste them with even more barbecue sauce and cook for 2 minutes, lid still closed.

Flip the ribs one final time to their original side and cook for 2 minutes, basting them with the last of the barbecue sauce.
