Grilled Spicy Lime Dill Fish
Ingredients
  • cooking spray
  • 2 pounds haddock fillets, each cut into thirds
  • 6 tablespoons butter, melted
  • 1 limes, juiced (with pulp)
  • 1 tablespoon dried dill weed
  • 1 teaspoon kosher salt
  • 1 teaspoon red pepper flakes
  • 1 onion, sliced crosswise 1/8-inch thick
Instructions
1
Preheat your grill to a medium heat setting, taking care not to exceed the recommended temperature.
2
To prevent sticking, lightly brush the grill grates with oil.
3
Begin by laying out four 8x10-inch squares of aluminum foil on a flat, stable surface.
4
Next, spray the foil with cooking spray to ensure easy food release.
5
Take four equal portions of haddock and position them in the center of each foil square.
6
In a small bowl, combine butter, lime juice, dill, kosher salt, and red pepper flakes. Stir until well-mixed, then drizzle the mixture evenly over each piece of fish.
7
Add a few slices of onion on top of each portion of fish.
8
To create a tight seal, bring the opposing ends of the foil together and roll them into a compact seam.
9
Roll the sealed edges towards the fish to ensure they remain secure.
10
Place the foil-wrapped packets on the preheated grill and cook for 5 to 7 minutes per side, or until the fish flakes easily with a fork.
