- 1 tablespoon soy sauce
- 1/2 teaspoon finely grated ginger
- 1/2 teaspoon grated garlic
- 8 ounces shishito peppers, rinsed
- salt to taste

Combine sesame oil, soy sauce, ginger, and garlic in a large bowl using a whisk. Add shishito peppers to the mixture and thoroughly mix everything together. Allow the vegetables to marinate in their own juices for 15 to 20 minutes, occasionally stirring them around.

Prepare the grill by preheating it over medium-high heat and heating a separate grill pan on the grates. Remove the peppers from their marinade, letting any remaining liquid fall back into the bowl. Place the peppers on the preheated grill pan and cook, stirring them every 1 to 2 minutes, until they are evenly caramelized on the outside, taking around 5 to 7 minutes.

Return the charred peppers to the bowl with their marinade and mix everything together again. Sprinkle a pinch of salt over the top and serve immediately
