Ingredients
- 1 red bell pepper, sliced into thin strips
- 1 green bell pepper, sliced into thin strips
- 1 large onion, sliced into thin strips
- 1 large fresh jalapeno pepper, sliced
- 2 1/2 teaspoons fajita seasoning mix, divided
- 1 teaspoon olive oil
- 12 ounces raw large shrimp, peeled and deveined
- 1 tablespoon lime juice
- 8 (6 inch) fajita-size flour tortillas
Instructions
1
Preheat your outdoor grill to a medium-high heat setting, ensuring it reaches the optimal temperature for grilling. Lightly brush the grill grate with oil to prevent sticking and promote even cooking.
2
In a large bowl, combine sliced bell peppers, onions, and jalapeno slices. Add 2 teaspoons of fajita seasoning and a drizzle of olive oil, stirring the mixture until it is evenly coated.
3
Set aside a separate bowl for the shrimp. Add the remaining 1/2 teaspoon of fajita seasoning and a squeeze of fresh lime juice. Gently mix the shrimp until they are evenly seasoned.
4
Transfer the vegetable mixture to a grill basket, taking care not to overcrowd it. Grill for 10 minutes, or until the vegetables are tender and lightly charred.
5
Add the seasoned shrimp to the grill basket with the vegetables. Continue grilling for an additional 5 minutes, or until the shrimp are pink and cooked through.
6
Remove the grill basket from the heat source and set it aside.
7
Place tortillas on the preheated grill, allowing them to toast for 2 minutes on each side. Once toasted, divide the filling among the tortillas and serve immediately.
