- 1/4 cup vegetable oil
- 4 cloves garlic, minced
- 2 teaspoons tomato paste
- 1 1/2 teaspoons salt
- 1 teaspoon dried oregano
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cardamom
- 2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces
- 2 onions, cut into large chunks
- 1 large green bell pepper, cut into large chunks
- 1 cup chopped fresh flat-leaf parsley

Combine yogurt, lemon juice, oil, minced garlic, concentrated tomato paste, salt, dried oregano, black pepper, ground allspice, ground cinnamon, and ground cardamom in a large bowl. Add chicken breast pieces and mix until the meat is evenly coated; transfer to a resealable plastic bag, press out as much air as possible, and seal the bag. Refrigerate for 4 hours to allow the flavors to penetrate.

Prepare an outdoor grill for medium-high heat and lightly brush the metal grate with oil. Thread chicken breast pieces, sliced onions, and bell pepper slices onto metal skewers.

Grill the skewers over preheated medium-high heat until the chicken is golden brown and reaches a safe internal temperature of 165°F (74°C), flipping them every 2-3 minutes on each side. Sprinkle chopped parsley over the skewers once they're done.
