Grilled Sati Babi

  • 1 tablespoon cumin seed
  • 3/4 teaspoon salt
  • 1/2 teaspoon vegetable oil
  • 1/8 teaspoon ground black pepper
  • 3 pounds pork butt roast, cut into 1 1/2 inch cubes
  • 1/2 cup sliced onions
  • 1/3 cup soy sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground ginger
  • 3 limes, cut into wedges

Combine coriander, cumin, salt, oil, and pepper in a glass bowl or dish. Incorporate the pork cubes and mix until they are evenly coated with the spice mixture. Allow the mixture to marinate for 20 minutes. Next, add the onions, soy sauce, brown sugar, and ginger to the bowl; blend all the ingredients together. Cover the bowl with a lid and refrigerate for at least 1 hour or overnight to achieve optimal results.

Heat up an outdoor grill to high temperatures and lightly grease the grill's surface. Thread the pork cubes onto eight skewers, discarding any unused onions in the process. Cook the pork on the preheated grill, frequently basting it with the remaining marinade. Rotate the skewers occasionally until they are cooked through, approximately 15 minutes. Serve the pork sprinkled with a squeeze of lime juice to taste, discarding any leftover marinade.
