- 4 portobello mushroom caps
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon minced garlic
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- salt and pepper to taste
- 4 (1 ounce) slices provolone cheese

Collect all necessary ingredients beforehand.

Arrange mushroom caps, with their smooth side facing upwards, in a shallow container or dish.

Combine balsamic vinegar, olive oil, minced garlic, dried basil leaves, and dried oregano in a small bowl. Add a pinch of salt and pepper to taste.

Pour the vinaigrette mixture over the mushrooms, allowing them to sit at room temperature for 15 minutes or so, flipping them halfway through the process.

Prepare the grill by preheating it to medium-high heat.

Brush the grill grates with a small amount of oil to prevent sticking. Place the mushrooms on the grill, reserving the remaining marinade for basting purposes.

Cook the mushrooms over medium-high heat until they are just tender, taking around 5 to 8 minutes per side. Periodically brush them with the marinade for added flavor.

Once cooked, place a slice of cheese on top of each mushroom. Continue grilling for an additional 2 minutes, or until the cheese is melted and bubbly.
