- 2 cloves garlic, chopped
- 2 teaspoons dried oregano
- salt and ground black pepper to taste
- 2 pounds pork tenderloin, cut into 1 1/2-inch cubes
- 3 large bay leaves, broken into pieces, or more to taste

Combine oil, wine, lemon juice, garlic, oregano, salt, and pepper in a bowl to create the marinade. Pour this mixture into a resealable plastic bag, then add the pork and coat it evenly. Remove any air from the bag before sealing it tightly. Allow the pork to marinate in the refrigerator for a minimum of 24 hours or up to 5 days.

When you're ready to cook, heat an outdoor grill over medium heat and lightly brush the grates with oil. Take the pork out of its marinade, letting any excess liquid fall away. Thread the pork onto metal skewers, placing a few broken bay leaves between each piece of meat. Set aside the marinade for later use.

Place the skewers on the preheated grill and cook for 10 minutes, turning them frequently to ensure even cooking. During this time, baste the pork with the reserved marinade every now and then. Discard the used marinade after 10 minutes of cooking.

Continue to cook the skewers until the pork is cooked through and the juices run clear. To check for doneness, insert an instant-read thermometer into the center of the meat. The temperature should reach at least 145 degrees F (63 degrees C).
