- 1 pound pork tenderloin, cubed
- 1 (8 ounce) can water chestnuts, drained
- 1 medium green bell pepper, cut into 2 inch pieces
- 1 medium red bell pepper, cut into 2 inch pieces
- 1 small sweet onion, chopped

Combine peanut butter, chopped green onions, soy sauce, freshly squeezed lemon juice, brown sugar, minced garlic, ground coriander, and a pinch of cayenne pepper in a medium-sized bowl. Add the pork and thoroughly mix to coat all pieces evenly. Cover the bowl with a lid and refrigerate for at least 30 minutes to allow the flavors to meld.

Next, preheat your grill to extremely high heat. Thread marinated pork, water chestnuts, sliced green bell pepper, red bell pepper slices, and thinly sliced sweet onion alternately onto skewers. Transfer the remaining marinade to a small saucepan and bring it to a rolling boil over high heat. Allow the mixture to cook for several minutes, stirring occasionally.

To prevent sticking, lightly brush your grill grate with oil. Cook the skewers for 10 minutes, or until they reach your desired level of doneness. Rotate the skewers halfway through cooking to ensure even cooking, and during the last few minutes of grilling, brush them with the boiled marinade to add extra flavor.
