Ingredients
- 10 onions, cut into wedges
- 1 cup vegetable oil
- 4 cloves garlic, crushed
- 7 dried juniper berries, crushed
- 1 tablespoon German stone ground mustard
- 1 tablespoon dried thyme
- 1 tablespoon dried oregano
- 1 tablespoon paprika
- 1 tablespoon curry powder
- 1 tablespoon cayenne pepper
- 1 tablespoon ground black pepper
- 8 (8 ounce) boneless pork loin chops
Instructions
1
Place onion wedges in a bowl and use a large spoon to apply gentle pressure, causing the onions to release their natural juices. Combine the oil, garlic, juniper berries, mustard, thyme, oregano, paprika, curry powder, cayenne pepper, and black pepper with the onions; mix until well incorporated.
2
Arrange pork chops in a large baking pan and pour the marinade over them, ensuring it's evenly distributed. Cover the pan with a lid and refrigerate for at least 24 hours.
3
Preheat an outdoor grill to medium heat. In the meantime, remove the pork chops from the marinade and allow them to come to room temperature. Wrap individual onion wedges in a separate piece of foil, discarding the marinade.
4
Cook the pork chops and onions on the preheated grill for approximately 10 minutes per side, or until the pork is no longer pink in the center.
