Grilled Pizza
Ingredients
  • 1 cup warm water (110 degrees F/45 degrees C)
  • 1 (.25 ounce) package active dry yeast
  • 1 pinch white sugar
  • 3 1/3 cups all-purpose flour
  • 1 tablespoon olive oil
  • 2 teaspoons kosher salt
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh basil
  • 1/2 cup olive oil
  • 1 teaspoon minced garlic
  • 1/4 cup tomato sauce, divided
  • 1 cup chopped tomatoes, divided
  • 1/4 cup sliced black olives, divided
  • 1/4 cup roasted red peppers, drained and chopped, divided
  • 2 cups shredded mozzarella cheese, divided
  • 4 tablespoons chopped fresh basil, divided
Instructions
1
Gather all the necessary ingredients and supplies beforehand.
2
Combine warm water, yeast, and sugar in a large mixing bowl; let the mixture sit for 5 to 10 minutes until the yeast becomes soft and starts to bubble, forming a creamy foam.
3
Gradually add flour, 1 tablespoon of olive oil, and salt to the bowl; mix until the dough comes away from the sides easily.
4
Transfer the dough to a lightly floured surface and knead for about 8 minutes until it becomes smooth.
5
Place the dough in an oiled bowl and cover it with a damp cloth; let it rise until it has doubled in size, approximately 1 hour.
6
Punch down the dough; then add minced garlic and chopped basil to it, mixing well. Allow the dough to rise for another 1 hour or until it has doubled in size again.
7
Meanwhile, prepare the garlic oil by combining 1/2 cup of olive oil with minced garlic in a microwave-safe container or bowl; heat it for 30 seconds in the microwave.
8
Preheat an outdoor grill to high heat and brush the grate with garlic oil for a flavorful base.
9
Divide the dough into two equal portions; shape each portion into an oblong form, about 3/8 to 1/2 inch thick.
10
Carefully place one piece of dough on the hot grill; it will start to puff up almost immediately. When the bottom crust is lightly browned, flip the dough over using two spatulas.
11
Quickly brush garlic oil over the crust to add extra flavor; this is crucial for achieving a perfect pizza.
12
Top half of each dough with 1/2 of the following ingredients: tomato sauce, chopped tomatoes, olives, red peppers, cheese, and basil.
13
Close the lid of the grill and cook until the cheese melts; then remove from the grill and let it cool for a few minutes before repeating with the second piece of dough.
