  • 1 teaspoon kosher salt, or more to taste
  • 1 pound beef top sirloin, trimmed of excess fat
  • 1/4 cup lemon juice
  • 1 tablespoon olive oil, or as needed

Combine minced garlic and salt in a bowl, blending them until they form a smooth, cohesive mixture.

Apply this garlic-salt paste evenly to the meat, ensuring it's fully coated. Place the meat in a bowl and pour over it a generous amount of lemon juice, allowing it to marinate for at least 30 minutes or up to 4 hours.

After the meat has absorbed the desired flavors, remove it from the lemon juice and brush it with olive oil to keep it moist.

Heat up an outdoor grill to extremely high temperatures and lightly grease the grill's surface with oil.

Sear the meat on the preheated grill, constantly turning it to achieve an even sear and char on the outer edges. This should take around 5 minutes.

Once cooked, remove the meat from the grill and carefully trim away any charred edges, cutting in the direction of the meat's fibers.

Return the uncooked center portion of the meat to the grill and continue cooking until it starts to firm up, becomes hot, and retains a slight pink hue in the center. This should take an additional 5 minutes per side.

To ensure the meat is cooked to perfection, insert an instant-read thermometer into the center and verify that it reaches a temperature of 140 degrees F (60 degrees C).
