Grilled Peaches with Blue Cheese

  • 3/4 cup balsamic vinegar
  • 3 tablespoons white sugar
  • 2 teaspoons freshly ground black peppercorns
  • 2 large fresh peaches with peel, halved and pitted
  • 2 1/2 ounces blue cheese, crumbled

Heat the grill to a medium-high temperature, making sure it's nice and hot before proceeding.

In a saucepan, combine vinegar, sugar, and pepper over medium heat, stirring occasionally to prevent scorching. Allow the mixture to simmer until it has reduced significantly and thickened, creating a syrupy consistency. Remove from heat and set the glaze aside to cool.

Place peach halves cut-side down on the preheated grill, allowing them to sear and caramelize for about 5 minutes. Flip the peaches over, taking care not to press down on them with your spatula.

Brush the tops of the peaches with the reserved balsamic glaze and continue grilling for an additional 2 to 3 minutes, or until they reach your desired level of caramelization.
