Ingredients
- 1 large peach – halved, stone removed, and skin on
- 1/2 lemon
- 1/4 cup white sugar
- 5 leaves fresh mint
- 2 fluid ounces simple syrup
- 3 fluid ounces bourbon (such as Bulleit®)
- ice
- 4 fluid ounces ginger ale, or as needed

Preheat your outdoor grill to a medium-high temperature, taking care to lightly brush the grates with oil to prevent sticking. Allow the grill to reach its optimal heat for 5 minutes, during which time you can prepare the ingredients.

Next, dip peach halves and lemon slices into a mixture of sugar until they are evenly coated. Place the fruit on the grill, cut-side down, and cook for 5 minutes or until they are tender. Remove from the grill and let cool on a cutting board for 1 minute.

While the fruit is cooling, prepare the cocktail ingredients. Place the remaining peach slices, mint leaves, and simple syrup in a cocktail shaker. Squeeze the juice of a lemon into the shaker, then gently mash the ingredients together with a cocktail muddler. Add bourbon and ice to the shaker, cover it, and shake vigorously until the outside of the shaker has frosted.

Strain the mixture into a chilled glass, topping it off with ginger ale. Garnish the drink by placing two reserved peach slices on top and adding a slice of lemon.
