Grilled Peach and Kale Salad
Ingredients
  • 1 medium red bell pepper, chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup chopped yellow onion
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 1/2 teaspoon freshly grated ginger
  • 1/2 teaspoon garlic paste
  • 1 tablespoon vegetable oil
  • 2 peaches, each cut into 8 wedges
  • 1/2 pound kale leaves, veins removed
  • 1/3 cup goat cheese
  • salt and pepper to taste

Combine the finely chopped red bell pepper, vinegar, onion, oil, honey, ginger, and garlic paste in a sealed container with a lid. Seal the container, shake it vigorously to combine all ingredients, and then refrigerate the dressing for at least 8 hours or overnight.

Prepare an outdoor grill by preheating it to a medium-high heat level. Lightly brush the grill grates with oil to prevent sticking.

Place sliced peaches and leaves of kale on the preheated grill. Continuously toss the kale leaves until they become soft and lightly charred on their edges, taking around 5 minutes to achieve this. Cook the peaches by turning them regularly until they develop grill marks, which should take about 3 minutes on each side.

Transfer the cooked kale leaves to a serving bowl and mix them with the chilled dressing. Top the dressing with the cooked peaches and crumbled goat cheese. Season with salt and pepper to taste, then serve the dish warm.
