Grilled Nigerian Suya Kebabs
Ingredients
  • 1 tablespoon finely ground roasted peanuts
  • 1 teaspoon ground cayenne pepper
  • 1 teaspoon ground paprika
  • 1 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/2 pounds beef tri-tip steak, cut into bite-size pieces
  • 1 red bell pepper, cut into bite-size pieces
  • 1/4 onion, cut into bite-size pieces
  • 4 mushrooms, halved

Combine ground peanuts, a pinch of heat from the cayenne pepper, and a smoky depth from the paprika in a bowl. Add a pinch of salt to bring out the flavors and mix in some warmth from the ginger, as well as a savory boost from the garlic powder and onion powder.

Combine the spice mixture with the beef in a resealable plastic bag; massage the ingredients together until they are evenly coated. Allow them to mingle in the refrigerator for about 30 minutes.

Preheat an outdoor grill over medium-high heat and give the grate a light coating of oil to prevent sticking.

Place the beef, bell pepper, onion, and mushrooms in an alternating pattern on skewers.

Cook on the preheated grill, flipping once, until the meat is nicely browned and the vegetables are tender, 10 to 15 minutes.
