Grilled New York Steaks with Cherry Sauce
Ingredients
  • 2 (8 ounce) New York strip steaks
  • 2 tablespoons Worcestershire sauce
  • salt and pepper to taste
  • 3/4 cup red wine
  • 1 pint fresh cherries, pitted and halved
  • 1 tablespoon white sugar
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon cornstarch
  • 1/4 cup water
Instructions
1
Preheat your outdoor grill to a very high temperature, making sure it's nice and hot before proceeding.
2
Apply a thin layer of oil to the grill grates, ensuring they're well-coated and ready for cooking.
3
Sprinkle a generous amount of Worcestershire sauce evenly onto both sides of the steaks, then season with salt and pepper to your liking.
4
Place the steaks on the preheated grill, allowing them to cook for 6-7 minutes per side or until they start to firm up and are hot throughout, with a slight pink hue in the center.
5
To check if the steaks are cooked to perfection, insert an instant-read thermometer into the center of each steak; it should read 140 degrees F (60 degrees C).
6
Once the steaks are done, cover them with two layers of aluminum foil and place them in a warm location to rest for 10 minutes, allowing the juices to redistribute.
7
While the steaks are cooking, prepare the cherry sauce by placing the red wine in a saucepan over medium-high heat and bringing it to a boil.
8
Boil the red wine for 5 minutes, then add in the cherries, sugar, and vanilla extract.
9
Return the saucepan to a boil, then reduce the heat to medium and let it simmer until the cherries are tender.
10
To thicken the cherry sauce, dissolve a small amount of cornstarch in water and stir it into the simmering mixture.
11
Cook for a few minutes until the sauce thickens, then pour it over the steaks to serve.
