  • 1 (10 ounce) basket cherry tomatoes, quartered
  • 4 tablespoons extra-virgin olive oil
  • 1 small shallot, finely chopped
  • 2 tablespoons black olive tapenade
  • 1/2 teaspoon salt
  • 8 basil leaves
  • 4 small fresh thyme sprigs
  • freshly ground black pepper to taste
  • 4 (12x18-inch) pieces aluminum foil
  • 4 (7 ounce) salmon filets, with skin

Heat up the outdoor grill to its highest temperature setting and lightly brush the metal grates with a small amount of oil.

Close the grill lid to trap the heat inside.

In a bowl, blend together cherry tomatoes, olive oil, finely chopped shallot, tapenade, salt, fragrant basil leaves, and earthy thyme leaves; mix everything together until it's well combined.

Place a sheet of aluminum foil on a flat surface, shiny side facing upwards. Position each salmon fillet skin-side down in the center of a piece of foil, leaving some space around it. Spoon 1/4 of the prepared tomato mixture over each piece of salmon, making sure to cover it evenly. Fold up the foil's edges over the salmon to form a tight packet, ensuring that the edges are sealed tightly.

Reduce the grill's heat setting and carefully place the foil packets on the metal grates. Close the lid again to maintain the heat, and cook until the salmon reaches a pale pink color in the center and flakes easily with a fork, taking around 7 to 8 minutes.
