- 4 bone-in pork rib chops (not pork loin chops) - at least 1/2-inch thick
- 1/3 cup extra-virgin olive oil

Combine the dried herbs, including sage, rosemary, thyme, and bay leaf, with salt, sugar, and fennel in a bowl. Thoroughly blend the ingredients until they are well incorporated.

Next, apply the herb mixture evenly to both sides of the pork chops. Subsequently, brush them with olive oil to ensure they are adequately coated.

Place the pork chops in the refrigerator for an extended period, allowing them to marinate and absorb the flavors of the herb mixture. This step can be carried out several hours prior to grilling or overnight.
