Ingredients
- 1 pound ground turkey
- 1 tablespoon light soy sauce
- 1 teaspoon minced garlic
- 2 teaspoons minced fresh ginger root
- 1 cup brown rice
- 1 cup water
- 16 large lettuce leaves
- 1 cup shredded carrots
- 1 cup green onions, thinly sliced
- 1 cup sliced red bell pepper
- 1 cup sliced radishes
- 1/3 cup light soy sauce
- 1/3 cup water
- 3 tablespoons fresh lemon juice
- 2 teaspoons minced garlic
- 1 tablespoon minced fresh ginger root
- 1 teaspoon sugar
Instructions

Combine ground turkey, 1 tablespoon soy sauce, 1 teaspoon minced garlic and 2 teaspoons ginger in a medium-sized bowl. Mix until well combined. Form the mixture into 16 meatballs and shape them into oval shapes. Place the covered bowl in the refrigerator to chill.

In a medium-sized saucepan, bring 2 cups of water to a boil over medium heat. Add the rice and reduce the heat to a lower setting. Simmer for 20 minutes, or until the rice is tender and cooked through.

Preheat your grill or broiler to a suitable temperature. Arrange the cooked rice, lettuce leaves, carrots, scallions, radishes and red peppers onto a serving platter or place each into individual small bowls. In another medium-sized bowl, whisk together 1/3 cup soy sauce, 1/3 cup water, lemon juice, 2 teaspoons garlic and 1 tablespoon ginger. Divide the mixture into 4 small dipping bowls.

Thread two meatballs onto each 10 inch skewer. Place the skewers under the grill or broiler and cook for 10 to 12 minutes, turning occasionally to brown all sides. If using the broiler, line the broiler pan with aluminum foil and drain excess fat after 6 minutes.

To enjoy your meal, place a leaf of lettuce on the palm of your hand. Add a spoonful of rice, followed by a meat roll and a few vegetables. Roll up the food into a neat package and dip it in the dipping sauce or spoon some over the top.
