Ingredients
- 3/4 cup butter
- 2/3 cup chopped onions
- 3 cloves garlic, chopped
- 1/4 cup fresh lemon juice
- 1 pinch salt
- 1 1/2 pounds sea scallops
- 1/3 cup chopped fresh parsley
Instructions
1
Heat up your outdoor grill to a medium temperature, then lightly grease the grates with oil.
2
Melt butter in a saucepan over medium heat and cook until it starts to foam, about 5 minutes. Add sliced onion and minced garlic to the saucepan and continue cooking until they become soft and translucent, stirring occasionally. Remove the saucepan from the heat source and stir in freshly squeezed lemon juice and a pinch of salt. Place the scallops in a large bowl, then toss them with the butter mixture; let it sit for about 2 minutes to allow the flavors to meld.
3
Thread the scallops onto skewers or use a wire grill basket to hold them in place. Cook the scallops on the preheated grill over medium heat, turning once, until they turn opaque and are cooked through, about 4 to 5 minutes.
4
Meanwhile, return the butter mixture to the saucepan and bring it to a rolling boil. Reduce the heat to low and keep the butter mixture warm while the scallops cook. Once the scallops are done, toss or brush them with the warmed butter mixture and serve immediately.
