Grilled Lemon Basil Chicken
Ingredients
  • 6 (4 ounce) boneless, skinless chicken breasts, trimmed of excess fat
  • 1 teaspoon freshly grated lemon peel
  • 1/4 cup fresh lemon juice
  • 2 teaspoons minced fresh garlic
  • 1/4 teaspoon salt
  • 2 tablespoons Mazola® Corn Oil
  • 1/2 cup loosely packed fresh basil leaves

Gently flatten the chicken breasts to a uniform 3/4-inch thickness using a meat mallet or rolling pin.

Dry the chicken thoroughly with paper towels to remove excess moisture, then place it in a large zip-top plastic bag.

In a blender or food processor, combine the lemon zest, freshly squeezed lemon juice, minced garlic, salt, and olive oil. Blend for 30 seconds or until the mixture is well combined.

Pour the marinade over the chicken, seal the bag and massage the meat to ensure it's evenly coated. Refrigerate for at least 15 minutes or up to overnight.

Heat the grill to medium-high heat, equivalent to about 400 degrees F.

Remove the chicken from the marinade and discard the excess liquid, then place it on the grill.

Cook for 4 to 6 minutes per side or until the chicken reaches a safe internal temperature, then transfer it to a serving plate.
