Grilled Jerk Pork Chops
Ingredients
  • 3/4 cup water
  • 1/3 cup lemon juice
  • 1/3 cup chopped onion
  • 1 tablespoon packed brown sugar
  • 1 tablespoon chopped green onion
  • 1 tablespoon canola oil
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme, crushed
  • 1/4 teaspoon cayenne pepper, or to taste
  • 6 lean pork chops, 1/2 inch thick

Combine water, lemon juice, finely chopped onion, brown sugar, minced green onion, oil, salt, allspice, cinnamon, black pepper, thyme, and cayenne pepper in a blender or food processor until the mixture is well combined and smooth. Set aside 1/2 cup of this marinade for later use.

Place the pork chops in a shallow glass dish and pour the remaining marinade over them. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 12 hours, but no longer than 24 hours to allow the flavors to penetrate the meat.

Preheat your outdoor grill to medium heat and lightly brush the grill grates with oil. Place the grill 4 to 5 inches above the heat source.

Take the pork chops out of the marinade and gently shake off any excess. Discard the remaining marinade.

Place the pork chops on the preheated grill, cover with a lid if available, and cook until they are no longer pink in the center, which should take about 5 minutes per side. Use a meat thermometer to check that the internal temperature reaches at least 145 degrees F (63 degrees C).
