Grilled Jerk Chicken Tacos
Ingredients
  • 1/2 cup mayonnaise
  • 2 tablespoons jerk seasoning, divided
  • 2 tablespoons lime juice, divided
  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless, skinless chicken thighs
  • 1 (20 ounce) can pineapple rings, drained
  • 8 (6 inch) flour tortillas
  • 1 cup shredded cabbage
  • 1/2 small red onion, minced
  • 1/2 cup chopped fresh cilantro

Combine mayonnaise, jerk seasoning, and lime juice in a small bowl. Set the mixture aside momentarily.

In another container, whisk together olive oil, remaining jerk seasoning, and remaining lime juice. Add the chicken to this mixture and stir until it is evenly coated.

Preheat an outdoor grill over medium-high heat and lightly brush the grill's surface with oil to prevent sticking.

Arrange pineapple slices on the top rack of the grill, followed by placing the chicken directly onto the grill. Grill for 6 minutes before flipping both pineapple and chicken over to continue cooking until the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C), approximately another 6 minutes.

Once cooked, transfer the chicken to a cutting board and allow it to rest for 5 minutes before slicing into thin strips.

Divide the chicken slices among the tortillas, along with a portion of chopped pineapple.

To assemble each taco, place shredded cabbage, onion, and cilantro on top of the chicken. Drizzle with the reserved sauce before serving immediately.
