Ingredients
- 4 (4 ounce) links hot Italian sausage
- 1 red bell pepper, halved and seeded
- 1 small onion, peeled and cut in half crosswise
- 2 teaspoons olive oil
- salt and pepper to taste
- 1 tablespoon olive oil
- 4 (6 inch) sandwich rolls, split and toasted
Instructions
1
Preheat your outdoor grill to a medium heat setting, allowing it to reach the optimal temperature. Lightly coat the grill grates with oil and position them 4 inches away from the heat source to ensure even cooking.
2
Use a fork to gently pierce the sausages in several places, setting them aside for cooking. To prepare the onions, carefully trim the bottoms to create a flat surface that will sit stably on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil to prevent sticking.
3
Place the sausages, onions, and peppers on the preheated grill. Cook and periodically turn the sausages until they are well browned and the juices run clear. Meanwhile, cook the vegetables until they are tender and the peppers develop a slight char.
4
Remove the sausages and vegetables from the grill, taking care not to burn yourself. To cool the peppers slightly, place them in a paper bag and let them sit for a few minutes. Once cooled, carefully remove the charred skin from the peppers and slice them into strips.
5
Slice the onion halves to create uniform pieces. In a bowl, combine 1 tablespoon of olive oil, salt and pepper to taste, and the sliced peppers and onions. Toss everything together until the vegetables are evenly coated.
6
Finally, assemble the dish by placing sausages in sandwich rolls and topping them with the pepper and onion mixture.
