Ingredients
- 2 cloves garlic
- 1/2 cup chopped green onions
- 1 tablespoon chopped fresh ginger root
- 1 cup roasted, salted Spanish peanuts
- 2 tablespoons lemon juice
- 2 tablespoons honey
- 1/2 cup soy sauce
- 2 teaspoons crushed coriander seed
- 1 teaspoon red pepper flakes
- 1/2 cup chicken broth
- 1/2 cup melted butter
- 1 1/2 pounds pork tenderloin, cut into 1 inch cubes

Using a food processor, combine minced garlic, chopped green onions, grated ginger, ground peanuts, freshly squeezed lemon juice, honey, soy sauce, dried coriander, and red pepper flakes. Process until the mixture is almost smooth, leaving some texture intact.

Add broth and melted butter to the processor bowl, and mix until well combined.

In a large zip-top bag, place pork cubes and pour the mixture over them. Seal the bag and refrigerate for 6 hours or overnight, allowing the flavors to penetrate the meat.

Preheat a grill over medium heat. Remove the pork cubes from the bag and thread them onto skewers, leaving a small space between each piece.

In a small saucepan, bring the marinade to a boil over medium heat for 5 minutes. Reserve a small amount of the marinade as a basting sauce and set aside to serve as a dipping sauce, reserving the rest of the marinade for cooking the pork.

Brush the preheated grill with oil to prevent sticking, then cook the pork skewers for 10-15 minutes on each side, or until well browned and cooked through. Serve the pork with the reserved marinade as a dipping sauce.
