Grilled Indonesian Chicken Satay
Ingredients
  • 3 tablespoons soy sauce
  • 3 tablespoons tomato sauce
  • 1 tablespoon peanut oil
  • 2 cloves garlic, peeled and minced
  • 1 pinch ground black pepper
  • 1 pinch ground cumin
  • 6 skinless, boneless chicken breast halves - cubed
  • 1 tablespoon vegetable oil
  • 1/4 cup minced onion
  • 1 clove garlic, peeled and minced
  • 1 cup water
  • 1/2 cup chunky peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons white sugar
  • 1 tablespoon lemon juice

Combine soy sauce, tomato sauce, and peanut oil in a bowl to create a marinade. Add minced garlic, black pepper, and cumin for added flavor. Mix well to incorporate all the ingredients. Place the chicken in the marinade and gently stir to coat it evenly. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes, but not longer than a day to avoid over-darkening the meat.

Heat up your grill to high heat. In a separate saucepan, warm some vegetable oil over medium heat and sauté sliced onions until they turn golden brown. Add minced garlic to the saucepan and continue cooking for another minute or two, until fragrant. Now, add water, peanut butter, soy sauce, and sugar to the saucepan. Stir constantly until all the ingredients are well combined.

Remove the saucepan from heat and mix in freshly squeezed lemon juice. Set the peanut sauce aside to be served later.

Before grilling, lightly brush the grill grate with oil. Thread chicken onto skewers, making sure to discard any remaining marinade. Place the skewers on the grill and cook for about 5 minutes per side, or until the chicken juices run clear. Serve hot with a side of peanut sauce.
