Grilled Herb-Infused Lamb Shank
Ingredients
  • 1 (4 pound) lamb shank
  • 3 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1/4 teaspoon ground thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried parsley
  • 1/2 teaspoon dried mint
  • 2 tablespoons ground black pepper
  • 1 pinch salt to taste
  • 1 pinch cayenne pepper, or to taste
  • 1/4 cup lemon juice
  • 3 tablespoons honey

Make diagonal cuts into the lamb shank, about 1 inch apart and half an inch deep. Place it in a shallow dish for marinating.

Combine olive oil, rosemary, thyme, basil, parsley, mint, black pepper, salt, and cayenne pepper in a bowl. Whisk until smooth and brush the mixture evenly over the lamb shank. Chill it in the refrigerator for at least 1 hour.

Heat a grill to medium temperature and lightly grease the grates.

Mix lemon juice and honey in another small bowl until well blended.

Place the lamb shank on the preheated grill and baste it with the lemon juice mixture every 15 minutes. Continue cooking until the lamb is nicely browned on the outside and still red in the center, which should take around 30 minutes per side. Use a thermometer to check if the lamb reaches an internal temperature of 125 degrees F (52 degrees C).
