Ingredients
- 1 lime, juiced
- 1/4 cup olive oil
- 1/4 cup chopped cilantro
- 1 jalapeno pepper, diced
- 1 tablespoon ground ancho chile powder
- 1/4 teaspoon ground cumin
- salt and ground black pepper to taste
- 1/2 pound halibut fillets
- 8 corn tortillas
- 2 cups shredded cabbage
- 1 (8 ounce) jar salsa
- 1 cup shredded pepper Jack cheese
- 1 avocado, sliced
Instructions
1
Combine lime juice, olive oil, chopped cilantro, sliced jalapeno, chile powder, ground cumin, salt, and pepper in a spacious container or resealable plastic bag. Mix well to create a harmonious blend of flavors. Add the halibut fillets and allow them to soak in the marinade for 20-25 minutes. Be cautious not to over-marinate, as prolonged exposure to lime juice may cause the fish to become overly tender.
2
Heat a grill over medium heat and lightly coat the grates with oil. Discard the marinade; cook the halibut fillets on the grill for 5 minutes. Flip and continue cooking until the fish breaks apart easily with a fork, approximately 2 minutes more.
3
Warm tortillas on the grill or stovetop. Divide the halibut among the tortillas and top with shredded cabbage, a spoonful of salsa, sliced pepper Jack cheese, and diced avocado.
