Grilled Flat Iron Steak Salad
Ingredients
  • 1 (2 pound) flat iron steak
  • salt and ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 large red onion, thinly sliced
  • 1/2 cup Italian salad dressing
  • 3 large red bell peppers, cut into 1/2 inch strips
  • 2 portobello mushrooms, sliced
  • 1/2 cup red wine
  • 4 cups baby spinach leaves
  • 1/2 cup crumbled blue cheese

Get the outdoor grill ready for a medium-high heat setting and lightly coat the grates with oil. Sprinkle salt and black pepper evenly on both sides of the steak.

Place the steak on the preheated grill and cook until it reaches your desired level of doneness, approximately 5 minutes on each side for medium-rare. Remove the steak from heat and let it rest in a warm environment.

Heat olive oil in a large skillet over medium-high heat. Sauté the onion until it starts to soften, around 4 minutes. Add salad dressing and stir in bell peppers and mushrooms. Reduce heat to medium and cook until the vegetables are tender, roughly 5 minutes. Use a slotted spoon to transfer the vegetables to a separate container and set them aside.
