  • 1/4 teaspoon red pepper flakes, or more to taste
  • 1/4 teaspoon ground chipotle pepper
  • 1 1/2 pounds beef sirloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch cubes
  • 1 green bell pepper, cut into 1-inch cubes
  • 1/2 onion, cut into 1-inch cubes

Combine olive oil, freshly squeezed lime juice, the grated outer layer of a lime, garlic, cumin, red pepper flakes, and chipotle pepper in a large glass or ceramic container. Mix well to create a uniform blend. Add the sirloin and gently stir until it is evenly coated with the marinade mixture. Cover the container with plastic wrap and refrigerate for 30 minutes to 2 hours.

Heat an outdoor grill over medium-high heat, ensuring the grates are lightly oiled to prevent sticking. Remove the sirloin from its marinade mixture and discard the remaining liquid. Thread the sirloin, sliced red bell pepper, green bell pepper, and onion onto skewers.

Grill the prepared sirloin and vegetables on the preheated grill for 4 minutes per side, or until the sirloin is nicely browned and the vegetables are tender.
