- 6 ears corn in the husk
- 1/2 cup mayonnaise
- 1 lime, juiced
- 1 teaspoon hot sauce
- 1/2 teaspoon mild chile powder
- 1/4 teaspoon smoked paprika
- 1/2 cup crumbled Cotija cheese
- 1/2 cup coarsely chopped cilantro
- 3 scallions, sliced

Gather all necessary components.

Submerge corn in chilled water for a minimum of 1 hour to rehydrate it properly.

Combine mayonnaise, freshly squeezed lime juice, hot sauce, chile powder, and paprika in a container. Place the mixture in the refrigerator to allow it to chill before use.

Preheat your outdoor grill to a medium temperature and lightly brush the grill grates with oil to prevent sticking. Remove corn from its soaking water, then place it on the grill, keeping it away from direct heat sources. Allow corn to cook for 15-20 minutes.

Once the corn is cooked, let it cool down sufficiently to handle easily. Remove the kernels from the cob and place them in a large serving dish.
