  • 4 skinless, boneless chicken thighs, cut into 1-inch cubes
  • 4 scallions, sliced into 1-inch pieces
  • 1/2 cup sake
  • 1/2 cup soy sauce
  • 3 tablespoons mirin
  • 2 tablespoons white sugar
  • 1 teaspoon vegetable oil, or to taste

Dip 10 wooden skewers in cold water for a period of 15 minutes to make them more pliable.

Thread chicken pieces onto the prepared skewers, carefully interweaving scallions in between to create a visually appealing pattern.

Combine 1/2 cup of sake, 1/4 cup of soy sauce, 2 tablespoons of mirin, and 2 tablespoons of sugar in a small saucepan and bring the mixture to a rolling boil. Lower the heat and let it simmer for 5 minutes, allowing the flavors to meld together. Set aside half of the sauce for a dipping accompaniment.

Heat a grill pan over extremely high heat and lightly brush it with a small amount of vegetable oil. Carefully add the skewers to the pan and cook until the chicken reaches a safe internal temperature, flipping them frequently with 1/2 of the sauce to ensure even basting.
