Ingredients
- 8 skinless, boneless chicken breast halves
- 1 pinch salt and ground black pepper to taste
- 2 cups peach preserves
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon finely chopped garlic
- 1 tablespoon Dijon mustard
- 4 ripe peaches, halved and pitted
Instructions
1
Preheat the grill to a medium heat setting and lightly coat the grilling surface with oil to prevent sticking. Prepare the chicken breasts by sprinkling them with salt and black pepper for added flavor.
2
In a bowl, mix together the peach preserves, olive oil, soy sauce, garlic, and Dijon mustard until a smooth and harmonious sauce is achieved. Season this mixture with salt and pepper to enhance the overall taste.
3
Reserve about half a cup of the peach sauce for later use as a glaze, setting it aside to be applied to the peaches.
4
Place the chicken breasts on the preheated grill and cook for 6 to 7 minutes, or until they develop a golden brown color on the bottom. Flip the chicken over and continue to cook for an additional 5 to 6 minutes, brushing both sides of each breast with the reserved peach sauce. Cook until the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C), indicated by a reading on an instant-read thermometer inserted into the center.
5
Simultaneously, arrange peach halves cut-side down on the grill. Grill for 2 minutes before flipping them over and brushing with the reserved peach sauce. Continue to cook until the peaches are tender, requiring an additional 3 to 4 minutes.
6
At this point, the chicken should be cooked through and the peaches tender, making it ready to serve.
