Grilled Chicken Skewers with Peanut Sauce
Ingredients
  • 20 wooden skewers
  • 6 boneless, skinless chicken breasts, cut lengthwise into strips
  • 6 tablespoons soy sauce
  • 6 tablespoons tomato sauce
  • 2 tablespoons peanut oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • 1 tablespoon peanut oil
  • 1/4 onion, finely chopped
  • 1 clove garlic, minced
  • 8 tablespoons peanut butter
  • 3 tablespoons white sugar
  • 2 tablespoons soy sauce
  • 1 cup water
  • 1/2 lemon, juiced
Instructions
1
Immerse wooden skewers in a container filled with water, allowing them to rehydrate for 20 minutes.
2
Prepare the marinade by combining chicken strips with a mixture of soy sauce, tomato sauce, peanut oil, minced garlic, and ground cumin in a small bowl. Ensure the chicken is evenly coated with the marinade, then let it sit for 15 minutes.
3
Prepare the peanut sauce by heating oil in a hot skillet over medium-high heat. Sauté sliced onion and minced garlic until they become soft and translucent, approximately 4 minutes. Add peanut butter, sugar, soy sauce, and water to the skillet, stirring until well combined. Continue cooking until the sauce thickens slightly, around 5 minutes. Introduce a squeeze of lemon juice and remove the skillet from heat.
4
Preheat an outdoor grill to high heat, lightly coating the grates with oil. Thread each chicken strip onto a skewer.
5
Place the skewers on the preheated grill and cook for 10 minutes, flipping halfway through to ensure even cooking. Serve the satay skewers immediately with the peanut sauce for dipping.
