Grilled Chicken Sandwich
Ingredients
  • 2 skinless, boneless chicken breast halves
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 lemon, juiced
  • 4 sprigs fresh dill, chopped
  • 1 tablespoon garlic and herb seasoning blend (such as Mrs. Dash®)
  • 1 teaspoon ground black pepper
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 8 thick slices French bread
  • 2 tablespoons mayonnaise, or to taste
  • 4 slices tomato
  • 4 lettuce leaves

Heat the grill to a suitable temperature for medium-high heat.

Take chicken breasts and pierce them with multiple holes using a fork, then place in a large container. Add 1/4 cup of olive oil, white wine vinegar, lemon juice, dill, garlic and herb seasoning, and black pepper to the container. Mix everything together until the chicken is evenly coated with the marinade. Allow it to sit for 10 minutes.

Take chicken breasts out of the marinade and discard the remaining liquid.

Place chicken on the preheated grill until it reaches a safe internal temperature, indicated by it no longer being pink in the center and having clear juices. Cooking time will vary depending on the size of the chicken breasts, but it should take around 10 to 15 minutes per side. To check if the chicken is cooked, insert an instant-read thermometer into the center of a breast and wait for it to reach at least 165 degrees F (74 degrees C). Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing it in half.

Melt butter and 2 tablespoons of olive oil in a skillet over medium-high heat. Sprinkle some garlic powder and salt over the butter and oil mixture. Add slices of French bread to the skillet; toast until golden brown on one side, about 3 minutes. Remove the toasted bread from the pan.

For making sandwiches, place one slice of French bread on a serving plate with its toasted side facing down. Spread some mayonnaise on the bread; top it with a slice of tomato, then season with salt and pepper. Cover with a half of the grilled chicken breast and a lettuce leaf. Spread mayonnaise on the other slice of French bread, which will be toasted side up; place it on top to make a sandwich.
