  • 2 teaspoons minced garlic
  • 2 medium carrots, chopped
  • 1 medium red bell pepper, chopped
  • 1 medium tomato, seeded and chopped
  • 1 cup fresh sliced mushrooms
  • 2 pounds ground chicken
  • 1/2 cup fresh bread crumbs
  • 1 large egg
  • 1 tablespoon seafood seasoning (such as Old Bay®)
  • kosher salt and ground black pepper to taste

Begin by lightly coating a skillet with cooking spray and placing it over medium heat. Allow the skillet to warm up for a few minutes before proceeding. Next, add sliced onions to the skillet and cook until they become soft and transparent, approximately 5 minutes.

Following this, add minced garlic to the skillet and cook until its aroma is released, roughly 30 seconds.

Now, add sliced carrots, bell peppers, diced tomatoes, and mushrooms to the skillet; stir occasionally until all the vegetables are tender, taking around 5 to 7 minutes.

Remove the skillet from the heat source and let it cool down completely, allowing the vegetables to reach room temperature, which should take around 20 minutes.

For the next step, preheat an outdoor grill over medium heat and lightly brush the grill grates with oil to prevent sticking.

In a large bowl, combine cooked vegetables with ground chicken and mix until well incorporated. Add bread crumbs, beaten egg, seafood seasoning, salt, and pepper; blend the mixture until it's smooth and cohesive.

Form the chicken-vegetable mixture into eight patties, making sure they're evenly sized and uniform in shape.

Place the patties on the preheated grill, cooking until they're no longer pink in the center and the juices run clear, taking around 5 to 6 minutes per side.

To ensure the chicken patties are cooked thoroughly, insert an instant-read thermometer into the center of each patty; it should read at least 165 degrees F (74 degrees C).
