  • 1 teaspoon brown sugar
  • 1 (4 pound) whole chicken, rinsed and dried
  • 1 tablespoon vegetable oil, or more as needed
  • 1/2 (12 ounce) can beer (such as Budweiser®)

Combine onion powder, salt, smoked paprika, cumin, cayenne pepper, garlic powder, oregano, thyme, and brown sugar in a small resealable plastic bag; shake the contents to ensure an even blend. Transfer the spice mixture to a small bowl for easy access.

Using your fingers, create two incisions in the chicken's skin - one on the front and one on the back. Gently pry the skin away from the underlying meat without tearing it, using your hand to guide the movement. Coat the chicken's skin and internal cavity with a generous amount of vegetable oil, then apply the spice rub evenly to all surfaces.

Preheat an outdoor grill to a medium heat setting. Place the beer can on the preheated grill and carefully slide the chicken onto it, positioning it so that the cavity aligns with the can. Grill the chicken until it is thoroughly browned, the juices run clear, and an instant-read meat thermometer inserted into the breast, avoiding any bone contact, reaches a minimum internal temperature of 165 degrees F (75 degrees C). Allow the chicken to cook for approximately 1 to 1 1/2 hours.
