  • 7 cloves garlic
  • 1/2 cup olive oil
  • 1/2 cup vinegar
  • 1/2 cup soy sauce
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons Dijon-style prepared mustard
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 (2 pound) tri-tip steak
  • oil for greasing

Combine the finely chopped onion, minced garlic, a generous amount of olive oil, vinegar, soy sauce, fragrant rosemary leaves, mustard, salt, and pepper into the bowl of a food processor. Blend until the marinade reaches a uniform consistency.

Next, place the steak in a large, resealable plastic bag. Pour the prepared marinade over the steak, ensuring it's fully coated, and seal the bag tightly. Refrigerate for approximately 3 hours to allow the flavors to penetrate.

Preheat your grill to extremely high heat. Before placing the steak on the grill, brush the metal grate with a sufficient amount of oil to prevent sticking.

Remove the steak from its marinade and carefully place it on the prepared grill grate. Discard the remaining marinade, as its flavor has already been absorbed by the steak. Cook on the preheated grill to your desired level of doneness or for about 7 minutes per side.
