Ingredients
- 1 medium lime, juiced
- 1 tablespoon minced garlic
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 2 tablespoons finely chopped canned chipotle peppers in adobo sauce
- 2 tablespoons adobo sauce, or to taste
- 4 (8 ounce) beef sirloin steaks
- salt and pepper to taste
Instructions
1
Combine lime juice, garlic, oregano, and cumin in a small bowl to create the marinade. Add adobo peppers and sauce to give it extra flavor.
2
Prepare the steaks by making a few shallow cuts on both sides using a sharp blade; sprinkle with salt and pepper to taste. Place the steaks in a glass baking dish, making sure they fit comfortably.
3
Pour the marinade over the steaks and gently turn them to ensure even coating. Cover the bowl with plastic wrap and refrigerate for 1-2 hours, allowing the flavors to meld together.
4
When you're ready to cook, preheat your outdoor grill to high heat and lightly brush the grates with oil.
5
Remove the steaks from the marinade, shaking off any excess liquid. Discard the remaining marinade and set it aside.
6
Grill the steaks on the preheated grill for 6 minutes per side, or until they reach your desired level of doneness. Use an instant-read thermometer to check the internal temperature; for medium, it should read 140 degrees F (60 degrees C).
