Grilled Adobo Chicken Thighs

  • 1 1/2 cups soy sauce
  • 1 1/2 cups water
  • 3/4 cup vinegar
  • 3 tablespoons honey
  • 1 1/2 tablespoons minced garlic
  • 3 bay leaves
  • 1/2 teaspoon black pepper
  • 3 pounds skinless, boneless chicken thighs

Preheat your outdoor grill to its highest temperature setting, making sure it's nice and hot. Lightly brush the grill grates with a small amount of oil to prevent sticking.

In a large cooking vessel, combine soy sauce, water, vinegar, honey, minced garlic, bay leaves, and a pinch of black pepper. Bring the mixture to a rolling boil, then carefully place the chicken into the pot. Lower the heat to its lowest setting, cover the vessel with a lid, and let it cook for 35-40 minutes.

Remove the chicken from the pot, allowing any excess liquid to drip off onto paper towels. Set the cooked chicken aside for now and discard the bay leaves that have been used to flavor the dish. Return the mixture to a boil, and let it simmer until it has reduced to approximately 1 1/2 cups.

Place the cooked chicken onto the prepared grill, cooking it for about 5 minutes on each side until it's nicely browned and crispy. Serve the chicken hot, accompanied by a generous helping of the remaining soy sauce mixture.
